The Physicochemical State of the Proteins in Cow’s Milk.*

چکیده
Herman Helmholz had his pupil Zahnz construct a filter out of a porous porcelain cylinder, and this form of apparatus was also used by Kehrer.3 Hermann modified Zahn’s method and used powdered porous plate to adsorb the casein. Tiemann, however, several years later made extensive use of a method devised by Lehmann,c in which the milk was placed upon a slightly concave, porous plate, whose surface had been polished with agate. After standing for 14 to 2 hours, the unadsorbed part, consisting of casein and fat, was scraped off and weighed. Tiemann applied this method especially to the study of the proteins of colostrum milk. Camerer and Soldner,T however, have criticized Tiemann’s method of analysis on the ground of the probable lack of uniformity of clay filters and also because they do not regard the casein to be completely retained on the porous plate.

Physicochemical characteristics and storage stability of clarified butter fat « smen » produced from pasteurized and non-pasteurized milk
Smen is a milk fat isolated by ‘boiling-off’ water. Milk fat was first converted into butter and then into smen. Smen product is utilized for culinary cooking and frying of different food. Smen has better shelf-life than other indigenous dairy products due to its lower moisture content. However, it undergoes deterioration (lipolysis and oxidation of milk fat) causes flavor impairment, lowers nu...
متن کاملEffect of Feeding Canola or Sunflower Seeds on Conjugated Linoleic Acid Enrichment in Cow’s Milk Fat
Two experiments studied the effects of canola or sunflower seed supplementation on conjugated linoleic acid (CLA) concentration in milk fat of lactating cows. In each experiment, only eight cows in early lactation were available to assign to one of two treatments in a completely randomized design and were fed individually for 12 wk. Experiment 1 compared similar diets with or without the additi...
متن کاملCow’s Milk Allergy versus Lactose Intolerance
An accurate diagnosis of adverse reactions to cow’s milk is critical to ensure an effective dietary management strategy and/or to avoid the unnecessary elimination of cow’s milk from the diet. Strict avoidance of cow’s milk, milk products, and some food ingredients derived from cow’s milk (e.g., casein, whey protein concentrate), with careful attention to the nutritional adequacy of the diet, m...
متن کاملA New Synbiotic Can Increase Weight Gain in Infants with Cow's Milk Allergy: A Randomized Controlled Trial
Introduction: Cow’s milk protein allergy is the most common food allergy in many countries, with clinical importance in different aspects. Synbiotic, a combination of probiotics and prebiotics, could be effective in the management of this allergy through modulating the immune system and improving the nutritional status. Methods: In this randomized, controlled trial, 32 infants with cow’s milk a...
متن کاملHematuria due to Cow Milk Allergy: a case report
Background: Cow milk allergy is one of the most common food allergies in young children causing a wide range of clinical syndromes due to immunologic responses to cow milk proteins. In this report we introduce an infant with dietary protein proctitis due to a cow’s milk referred with hematuria and bloody stool. Case Presentation: Our case was a 10- month old m...
متن کاملAllergy to all mammalian Bovidae proteins but cow's milk in a child.
Cross reactivity between mammalian proteins (cow, goat, ewe, buffalo) has been previously described in both in vitro and in vivo studies. The highest homologies are observed between the milk proteins from cows and other Bovidae, being on average 96.1% for buffalo, 91.1% for ewe, and 87.6% for goat. Lower sequence similarities are associated with proteins contained in milks from Suidae (pigs and...
